Creamed Spinach (for the lactose intolerant)
2 packages 16 oz) frozen leaf or chopped spinach.
½ cup chopped onions
1 teaspoon chopped garlic
1/3 cup goat cheese
¼ cup feta cheese
1 T olive oil
Salt and pepper to taste
In a large non stick skillet, sauté the onions and garlic in the olive oil till soft and just beginning to brown.
Add frozen spinach.
Cook till spinach is cooked through.
Add cheeses and stir in till melted.
Add salt and pepper to taste.
I love having this spinach on hand. I make spinach omelets, and also a spinach pizza on corn meal crust.
My husband and I don’t do wheat or dairy as much as we can avoid it for a better alternative.
This spinach recipe is definitely a good one.
